Here are the recipes from our vegetarian Thanksgiving cooking class:
Vegan gluten free “meat” loaf (nut loaf)
Ingredients:
2/3 c. walnuts, ground
1/2 c. sunflower seeds, raw, ground
1 medium potatoes, pureed
1 small onion, diced
3 cloves of garlic, minced
1 cup of dairy free milk
1 tsp salt
1/4 tsp sage
1 c. rolled oats.
Combine all the ingredients. Let it sit to absorb some of the liquid. Bake for 30 minutes covered gand about 15 minutes uncovered at 350F.
Barbecue sauce
Ingredients:
1 12oz can tomato paste
1 small jar of salsa, mild
2-3 tbs of blackstrap molasses
1 lemon, juiced
1/2 c. honey
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 c. water
Let it cook together in a pot on the stove
Candied yams
Ingredients:
7-8 medium sweet potatoes
1/2 c. coconut milk (put in a separate container)
1/4 c. honey or maple syrup
1 tsp. vanilla (optional)
1/2 tsp. salt
1/4 c. water (or more)
Mix wet ingredients together with salt. Peel and slice the sweet potatoes. Pour liquid mixture over the potatoes, and bake at 350F until they’re tender.
Mashed Potatoes
Peel and cook 7-8 medium potatoes in water. Pour off most of the water and add coconut milk.
1 can coconut milk.
Add salt to taste.
Can add onion and garlic powder.
Mash the potatoes.
When finished, sprinkle basil leaves or dill on it.
